Fried rice with soy sauce - quick and easy meal

It has been a tough week for me.  I got a very vicious flu and couldn't get up in the first 2 days.  I couldn't make big meal.  Fried rice is one solution.  It usually only takes me 10 minutes to prepare and cook. I love fried rice. It can be my main course at dinning table.  I can make at least 10 different fried rice dishes.  Here is a simple and basic recipe.  You can always try at home.  Quick and easy.

Ingredient :
Cooked white rice                    2 cups          (leftover of previous meal, or new cooked rice)
Egg                                           2 pcs      
Scallion                                    1 stem           chopped
Soy sauce                                 1 1/2 tbsp
Cooking oil                               2 tbsp
Salt and black pepper to taste

Step by step :
 1. Heat the wok or frying pan with big fire until it starts to smoke.  Pour the oil on it.

2. Cracked 2 eggs into the wok or frying pan, and used spatula to stir the eggs for 30 seconds.  And turn the burner to medium heat.
3. When the eggs still contain the running juice, pour the cooked rice to it.  Stir well.  Break the lumps of rice until all the rices all separated and eggs are cooked and coated on the rices.  It is about 2 minutes.  
 4. Pour the soy sauce on it, and salt and black pepper on the rice.  Stir them together for another 1 minute.
5. Put the chopped scallion on it, mix them well for about 30 seconds. And turn off the burner.

  1. I will try this some time with brown rice. Don't know why I never thought of it before. Maybe because we hardly ever have leftover brown rice? Well, I'll try this after the shrimp you posted...
